the great food blogger cookie swap: coconut chocolate chippies

i had such a blast participating in the 2011 great blogger cookie swap.  a huge thanks to love & olive oil for their time, energy and effort in making this happen.

to be honest, 72 hours before the shipping deadline i had absolutely no idea what i was going to make.  i am a creature of habit and most all of my tried and true cookie recipes had been featured on the blog (exhibit a, b, + c).  not only did i have to find a new, uber delicious, recipe, but it had to appeal to my fellow food obsessed blogger friends.  talk about a tough crowd.

after staring at the pantry, some cookbooks, and consulting my baked goods obsessed husband, i settled on a variation of your basic chocolate chip cookie recipe that incorporates one of my favorite holiday baking ingredients: coconut!

a few hours in the kitchen later, i ended up with a delicious chewy, but slightly crispy, bursting with flavor cookie.  i hope tiffany, heather, + caroline agree!

coconut chocolate chippies.

makes 18 cookies

  • 1 cup shredded sweetened coconut
  • 1 cup white whole wheat flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 3/4 cup packed brown sugar
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1/2 cup mini chocolate chips

preheat oven to 350 degrees.  on a baking sheet, spread coconut in a single layer.  bake for 7 minutes, stirring twice.  (keep an eye on this — it burns easily!)  set coconut aside.  in a small bowl, whisk flour, baking powder, baking soda + salt until combined.  in a separate bowl, beat sugar, butter, vanilla + egg until smooth.  gradually stir in flour mixture until just combined.  stir in coconut.  drop by tablespoon onto a greased baking sheet and bake at 350 degrees for 12 minutes (or until slightly browned).  do not over bake.

these look awesome and if I wasnt traveling in Dec, I would have participated.

It looked like the best swap I’ve ever seen and I think it was…600+ participants I read somewhere…wow!

were that the case, i would have rigged the whole thing to ensure you would be matched with me. i’m pretty sure my life would never be the same if i was lucky enough to try one of your oatmeal raisin cookies :)

when do you add in the coconut? do you roll the cookies in it or stir it into the dough?

probably should have included that! stir it in right after you mix wet + dry. just updated the recipe… thanks for catching that :)

Lovely! I’m a big coconut fan but I often forget about it. I’m bookmarking this recipe so I don’t forget next time I feel like baking…Which might be awhile because I’m all swapped out – but don’t you worry! I’ll make these sometime soon!
