a simple saturday.

hello from the beautiful state of colorado!

after my busy week working out west, matt joined me for a relaxing long weekend.  we spent today exploring denver and are headed tomorrow up to boulder for the day.  it has been absolutely beautiful thus far!

backing up, matt arrived yesterday afternoon and after a quick nap, showers, and tidying up, we headed out for a low key dinner.  i had spotted earlier in the week and knew i wanted to return before the end of this trip.

mod market is known for its soups, salads, sandwiches and pizzas made from local, simple + natural ingredients. after much debate, we settled on his + hers salads and a pizza split down the middle.

i chose the autumn leaf salad:  spinach, beets, walnuts, red onion, feta + dill yogurt dressing that i ordered topped with roasted chicken.  the dressing on this salad was out of this world!  and of course, anything with copious amounts of feta is good in my book.

our pizza of choice was topped with goat cheese, tomato, arugula + red bail pesto.  again, absolutely delicious.  light, but super flavorful.  i devoured my 3 piece half!

i’m not quite sure what makes red basil pesto well… red, but in any event it was mouth watering.  similar tasting to the traditional green version, but still a fun alternative!

after a frozen yogurt dessert, we crashed hard and slept for 9 hours!  thanks to our early bedtime, we were still up and at it by 7:30 this morning and headed out to a local dinner for some morning sustenance.

i filled up on a spinach, mushroom + tomato omelette alongside a cup of fruit and wheat toast to fuel me through a morning of sight seeing.

with full bellies we headed out for a long walk in washington park, a denver gem if i do say so myself!

i could include so many more pictures, but i think these few sufficiently show the beauty of this city!  we spent 2 peaceful hours just walking, talking and relaxing.  a perfect saturday.

you are both a lovely couple…you are so pretty…and your hubby reminds me of one of the lead actors on “criminal minds” (that’s a good thing).

gosh, i wish I lived with u so i could re-learn how to eat again. i’m a mess right now in that department.

i am! most of the time it is for work, not play, though. this weekend is a nice change :)
