sprouts + squash.

another day, another dollar.  another exhausting afternoon.

wishing i was still enjoying the serenity of the denver mountains!

i unwound around 5:30 this afternoon with a delicious glass of white.  i’m not a big weeknight drinker (but more than make up for it on the weekends); tonight, though, a glass of wine while curled up in my sweats sounded just perfect.

backing up, i spent my afternoon head first in a pile of work.  i have some major deadlines coming up that are leaving me slightly more than stressed.  i also worked on updating some pages on the blog (check out the new about me + recipe pages!)

i broke quickly for lunch around 1:30 (those egg white puffs really kept me full!) and enjoyed a protein packed veggie bowl.

in today’s mix:

  • spinach
  • brussels sprouts
  • TJ’s organic chicken breast (pan sautéed)
  • crumbled feta
  • garlic lover’s hummus (yummy!)

i love these one dish lunches — so quick and easy to clean up!

with lunch being late and dinner on the early side, i was ok without an afternoon snack (so unlike me!), but did sip my usual 4:00 p.m. kombucha.

i was on my own for dinner tonight and took the opportunity to use up one of my favorite winter vegetables that matt won’t touch with a 10 foot pole: spaghetti squash!

i cut the squash in half (which was more of a workout than my 30 minutes at the gym this morning!) and placed it face down in a baking pan with about 1 inch of water.  375 degrees and 35 minutes late, i had a bowl of beautiful spaghetti strands!

for the sauce, i crumbled up and pan cooked about 4 ounces of grass fed sirloin from our butter down the street.  i added the meet to my new jar of TJ’s organic marinara sauce and topped my spaghetti with a generous ladle-ful.  (side note: i seriously need to invest in a light box.  this artificial lighting is killing me.)

on the side i heated up a small bowl of last night’s grilled veggies (made a huge batch to last me throughout the week!)  simply cooked with olive oil and salt, but did their job in packing in some nutrients.  again, i’ll leave the picture to your imagination, because lighting was just not my friend this evening!

on a prettier note, i just pulled a out of the freezer (still delicious weeks later!) for dessert.

and as luck would have it, matt just called to see if i wanted him to stop for fro yo on his way home!  looks like it’s double dessert for me tonight.  never a bad thing.
