this is not ok. for so many reasons. most notably, though, the fact that it currently feels like negative 4 degrees.
definitely… definitely… ugg weather.
the part that really gets me about this situation, though, is that there’s not even any pretty snow to mitigate the pain of the frigid temps. i’m already looking forward to a 5 p.m. date with my blankets, dvr + fuzzy slippers.
ok. complaining time over!
following what has become my much too routine morning soy misto (thank you all for the scoop on how to get free soy!), i whipped up a batch of pumpkin protein egg white puffs (originally seen here) and was reminded just how delicious this super easy breakfast concotion is!
the key to the puff is really whipping the egg whites with a pinch of xanthan gum (cream of tartar works as well). i use an electric mixer and beat for about 4 minutes — yes, 4 whole minutes — it’s worth it!
the add ins are totally up to you — and the possibilities endless! — but for my version today, i used:
- 1/2 cup liquid egg whites
- pinch xanthan gum (or cream of tartar)
- 1 scoop (14 g.) vanilla whey protein powder
- 1/4 cup canned pumpkin puree
- 2 teaspoons cinnamon
- stevia to taste (optional)
directions: preheat oven to 400 degrees. beat egg whites for 3 – 5 minutes until stiff peaks form. fold in protein powder, pumpkin, cinnamon + stevia. spoon onto lined and greased baking sheet (size is up to you — mine are about coaster size) and bake for 10 minutes, or until slightly browned.
toppings of the day: TJ’s almond butter (mixed with a bit of almond milk and heated to thin) + maple syrup. chocolate chips would also be wonderful!
this one plate, with one tablespoon of almond butter included, packs a whopping 23 grams of protein. definitely kept me going through the morning!
prior to breakfast, i made a quick trip to the gym for this heart pumping elliptical workout. i’m not usually a fan of the elliptical (feel as though i’m getting more bang for my buck on the treadmill), but the intervals throughout this quick 30 minutes really kicked my booty!
someone is having fun with font colors this morning. FYI: i consider moderate to be about 75 – 80% effort and sprint, well, a sprint! 100%. i followed up the elliptical with . someone is going to be sore tomorrow!
