this girl’s saturday has been jam packed!
i was up super early to squeeze in a run before an 8 a.m. meeting downtown (yes, i know, it’s saturday). i blew through 3.25 miles, grabbed a quick shower, and was out the door by 7:15. i picked up a veggie juice (kale, carrots, celery, cucumber, green apple, lemon + parsley) for the ride downtown…
…and grabbed a venti non-fat misto (extra foamy + extra hot!) before heading in to the meeting. i generally try to avoid caffeine, but today it felt very necessary.
i was slated for a 9:00 a.m. presentation that went swimmingly and was on my way home by 10:15. amazing how much i accomplished early on a saturday morning! i grabbed a bagel on my way and toasted it up with a schmear of pb + j when i arrived back home.
matt and i headed out for the dog park around noon and spent a good 45 minutes watching mocha and winnie chase tennis balls at full out sprint speed until they dropped. needless to say to they absolutely, positively pooped.
lunch was a hodgepodge, but i can tell you this brussel sprout addiction is getting a little out of control. i fixed myself a large plate of the veggie, roasted with olive oil and topped with my favorite whole foods roasted red pepper hummus.
the second part of my meal was a bowl of ice cream because… well… it’s saturday. one scoop of chocolate aside one scoop of peanut butter. served in a fancy glass with a tiny spoon. perfection.
i also munched on a few vegan coconut cookie bites. still delicious
not the most nutritionally sound lunch i’ve ever put together, but it worked. and tasted delicious!
we’re meeting friends for drinks and then heading to a late dinner with the in-laws. enjoy the evening!
how do your eating habits change on the weekends?
i find i eat less actual meals on the weekends, and more snacks. we usually have a later breakfast saturday and sunday morning which leads to afternoon snacking up until dinner. i definitely indulge in more treats on the weekends!

it is wet, cold + foggy this morning — a big change from the 70 degree temperatures and sunny skies that stayed with us through the first half of the week.
i was up early (5:15 a.m.!) this morning to squeeze in a workout before a 7:00 a.m. appointment. a few years ago, when i worked an 8 – 5 office job, i regularly worked out before 6:00 a.m. as it was the only time i could fit it in. working from home, though, allows me to squeeze in exercise at different times in the day and i have definitely taken advantage of the opportunity to sleep a little later. today reminded me, though, that there is something very rewarding about having a kick-butt work out under your belt before the sun rises.
i pushed through a 50-minute, approximately 5 mile, treadmill workout this morning that looked something like this:
a great workout for all levels. i was a super-schweaty mess by the end.
a hearty pancake breakfast helped wit the refueling process!
banana protein pancakes for one
- 1/4 cup whole wheat pastry flour
- 1 scoop (14 g.) vanilla protein powder
- 1/2 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 tablespoon brown sugar (optional)
- 1 large egg white
- 1/2 large ripe banana (mashed)
- 1/8 cup water (or milk)
sift flour, protein powder, baking powder, cinnamon + sugar. add egg white, water + mashed banana. heat skillet over med-high heat and cook 2- 3 minutes per side. top with syrup.
this was a variation of my pumpkin protein pancakes and, dare i say it, but i do believe i prefer the banana version! this batch was a bit fluffier and the chunks of banana throughout were a fun and delicious addition. a quick and easy recipe when you’re cooking for one, but easily multiplied to feed the whole family!
while devouring my pancakes, i spent a few minutes browsing pinterest in search of fall home decor inspiration. we are hosting thanksgiving this year for my immediate family as well as matt’s and i am determined to add some festivity to our home. some of my favorite finds:

it is a chilly one here, but i managed to drag myself from the warm covers for a 4 mile run/walk with the dogs. not only was this my first time running with 2 dogs, but it was winnie’s first time on a leashed run — ever! it was an experience, but they both did a great job. if nothing else, great interval training — start. stop. sprint. pee. jog. sniff. walk. repeat. we covered close to 4 miles in around 40 minutes.
after our run, i whipped up a batch of chocolate chip cookies for our neighbor who is very graciously watching the pups while matt and i are at the bears game this afternoon.
it took everything i had not to settle on a breakfast of warm chocolate chip cookies, but i decided a more nutritious morning meal would be a better decision. as i mentioned last week, football game days are not always the healthiest and i figured i would squeeze in some veggies before the fun begins.
despite the cold temps, i went with my basic green monster recipe (that looks extra green in this picture!)
- 2- 3 cups raw spinach
- 1 large banana (frozen)
- 2 scoops vanilla protein powder
- 1 cup almond milk
- pinch of xanthan gum
i’m now sipping a warm cup of tea before we head out for the day.
make it a great one! go bears.

as fall rolls in, the temperatures begin to drop, and our days get shorter, many feel resigned to the gym and 5 months (or up to 8 if you live in chicago) of running to nowhere on the treadmill, pedaling like a squirrel on the elliptical, and spending 30 minutes each day looking at ourselves in the mirror while lifting those dumbbells. if i had a penny for every minute i spent unhappy on a treadmill grinding out a run because it was too snowy and cold to hit the sidewalk, i would have enough money to move myself to hawaii and never look back.

it’s a coffee kinda morning round here! i’ve been on the go since 6:30 a.m. with a full afternoon ahead of me. it all started with a quick, but efficient, trip to the gym where i powered through a 60 minutes cardio blast.
